Walnut, quinoa, & Arugula Salad

8 oz arugula 226g) (1 box)
1 1/2 cup quinoa cooked (1/2 cup dry)
1/2 cup walnuts, chopped in half
6 cherry tomatoes
Half avocado cut In pieces
Two Scoops of @nayasfoods green olive cauliflower dip
pinch sea salt
pinch pepper

Mediterranean Dressing:
3/4 cup parsley leaves, tightly packed
1/4 cup apple cider vinegar
1 clove garlic
3 tbsp olive oil
2 tsp honey
1 tsp dijon mustard
pinch sea salt

1. Begin by washing your arugula and drain .
2. Add the arugula, Add cooked quinoa, cauliflower dip , tomatoes , chopped walnuts , and a pinch of sea salt and pepper.
3. Make your Mediterranean dressing: In a blender add the parsley, apple cider vinegar, garlic clove, olive oil, honey , mustard and a pinch of sea salt. Blend until smooth.
4. Pour the green goddess dressing over the salad and toss to combine.
5- add the avocado pieces and some walnuts on top and serve!
